Cannabis Infused Chocolate Peppermint Eggnog Recipe

It's December, so for most of us that means bundling up warm and enjoying time with the people we care about and indulging in some holiday treats. Eggnog is one of those seasonal drinks that just seems to spice up those boring evenings at home, complimenting a roaring fire and friendly conversation like no other holiday drink. Even though we are going to show you how to infuse your eggnog with cannabis, you can still include your favorite spirit, whether it be rum, bourbon, or brandy. 

There are multiple parts to this recipe, and it can become quite intensive. Don't let that get you down. This recipe is worth every bit of love you have to put into it. If you know someone who uses medical marijuana, then let this drink be the highlight of their holiday.

Cannabis Infused Chocolate Peppermint Eggnog 

Part 1: Making Canna-Cocoa Butter. 

Follow our recipe for making organic vegan coconut cannaoil.
However, instead of using coconut oil, use edible cocoa butter.
Zest from an orange/lemon is optional, to make a more traditional eggnog, don't include the zest.

Part 2: Making cannabis infused white chocolate



1. Place cocoa butter in a microwave-safe bowl and melt in the microwave.
2. Stir in the powdered sugar and the milk powder.
3. Make sure that all of the sugar is completely dissolved in the cocoa butter.
4. Stir in the remaining ingredients.
5. Pour or spoon the mixture into your molds.
6. Refrigerate until cool.

Part 3: Making cannabis infused chocolate peppermint eggnog



1. Make an ice-water bath in sink or large bowl and set it aside.
2. Whisk eggs, egg yolks, sugar, salt, vanilla and peppermint extracts in large saucepan over medium-low heat until they combine.
3. Continue whisking, pour the milk in slow and steady until fully incorporated. Raise heat to medium.
4. Cook, while continuing to whisk, until the mixture is 160 degrees, and is thick enough to coat the back of a spoon. This should take 30-35 minutes.
5. While you are whisking the main mixture, melt the cannabis infused white chocolate in a heatproof bowl over a pan of simmering water.
6. Remove the saucepan from heat, add the melted cannabis infused white chocolate, and stir until incorporated.
7. Pour mixture through a fine sieve into a medium sized bowl. Set bowl in ice-water bath.
8. Let the mixture cool completely, then transfer to an airtight container, and refrigerate overnight.
9. Crush the peppermint candy canes in your food processor until finely crushed. Then sift in a small strainer to get rid of the dust.
10. Remove the mix from the refrigerator, and set aside.
11. Pour heavy cream into a bowl, use an electric mixer on medium speed until stiff peaks form.
12. Fold the heavy cream mix into the eggnog mix until combined
13. Fill cups with cannabis infused peppermint eggnog. You can also mix in your favorite rum, bourbon, or brandy.
14. Finely, sprinkle with crushed peppermint and a dash of cinnamon, garnish with a peppermint stick/cinnamon stick.
